I don't think I am the only one missing rice, pasta and potatoes. This is a great rice substitute. It goes great with dishes with a lot of sauce as it soaks up the sauce just like rice.I tried it on my husband who is an avid cauliflower hater, and he said it didn't taste like cauliflower.

This is a good alternative to dessert when such is needed. It is not very sweet, but with whipped cream with some sweetener (I use Splenda) it is very good.
